Hotel Giant Kimpton Launches New Late Night Spirits Program

San Francisco-based Kimpton Hotels & Restaurants is rolling out a new cocktail program across more than a dozen of its locations this month that invites its guests to enjoy a traditional nighttime spirit paired with a snack. The Nightcap Program, which each hotel has the option to customize, will offer hotel customers spirits such as brandy, Cognac or Port paired with small samples of cheese, shortbread or pastries. The hotels will rotate the spirits on offer every three months depending on the season.

While wine sales once dominated Kimpton’s beverage alcohol business, senior director of national beverage programs Emily Wines tells SND that cocktails have been increasing their presence, and that wine and spirits each currently account for about 35% of the company’s drinks business with beer comprising the remaining 30%.

Kimpton is rolling out the Nightcap Program at 17 hotels such as the Surfcomber in South Beach, Florida; Morrison House in Alexandria, Virginia and Hotel Palomar in Philadelphia. The company says it expects all its locations to participate by the end of the year. Kimpton currently operates more than 60 hotels with over 70 restaurants, bars and lounges in 30 cities across the country.
