•Alberta, Canada’s Eau Claire Distillery has introduced two of its spirits in the United States: Parlour Gin ($48), a London-dry style expression, and Prickly Pear Equine Ox ($48), a barley-based, prickly pear cactus–infused spirit. Eau Claire’s products are made with ingredients sourced from local farms. The distillery’s portfolio also includes Three Point Vodka, Gin Rummy, Christmas Gin and Single Malt Whisky. Eau Claire’s U.S. importer is Park Street.

•Austin, Texas-based craft distiller Desert Door has started production and will release its first product in October. Original Desert Door Texas Sotol ($50) is billed as a vegetal and crisp 40%-abv spirit produced from West Texas-grown evergreen sotol. Next February, the distillery will follow with Desert Door Oak-Aged Sotol ($70)—a 50%-abv spirit rested for 24 weeks in new charred American Oak barrels.
