Whisky Advocate: Dewar’s Master Blender Stephanie Macleod On The Latest Dewar’s Cask Finished Release
July 22, 2021This month Dewar’s is rolling out the latest edition in its cask finished series, Dewar’s Japanese Smooth, which is Dewar’s 8 year old finished in casks made from Japan’s native oak species, mizunara. It’s the fourth iteration in the cask finished series, which has also featured expressions finished in rum, mezcal, and port casks.
Whisky Advocate spoke recently with Dewar’s master blender Stephanie Macleod about the intricacies of working with mizunara, a notoriously delicate, difficult wood that traditionally was the sole province of Japanese distillers—most prominently with Suntory’s Hibiki and Yamazaki single malts. Those whiskies have attracted legions of fans, and non-Japanese distillers are now embracing this rare wood type—including Dewar’s, which is among the few Scotch players to do so.
