August 24, 2012•Ancram, New York’s Hillrock Estate Distillery is making its debut with the launch of its first spirit, a solera-aged Bourbon, next month. Crafted by former Maker’s Mark master distiller Dave Pickerell, the new offering is made with locally-grown corn, in line with Hillrock’s “field-to-glass” production process. The solera aging method—which involves the blending of many different vintages—has allowed the Bourbon to achieve an average age of six years. Hillrock’s Solera-Aged Bourbon ($80 a 750-ml.) will be available at the distillery and various New York retailers next month. A single malt whiskey (available only at the distillery, priced at $125), meanwhile, will launch in October, followed by a Hillrock Estate Rye and Bourbon in 2013.
•Seattle-based Two Beers Brewing Co. has announced an early release of its 2012 Fresh Hop brew. The beer, part of the company’s seasonal lineup, will be available August 31 at Two Beers Brewing’s tasting room followed by a release in bars, restaurants and at retail throughout the Pacific Northwest starting September 3. The 6.2%-abv brew contains Centennial hops, as well as locally grown Apollo, Cascade, Columbus, Super Galena and Warrior hops. The release will be followed by a launch of Pumpkin Spice Ale and Heart of Darkness Imperial Cascadian Dark Ale in 22-ounce bottles on September 7 and October 1, respectively. Two Beers Brewing’s line of year-round beers includes 20:20 Blonde Ale, Evolutionary IPA, Immersion Amber, Persnickety Pale and SoDo Brown. Its products can be found in Washington, Oregon, Alaska and Idaho.
